Tequila Queso Fundido is a fun and flavorful blend of melted cheese, tomatoes, chiles and a slash of tequila – perfect with tortilla chips for your next party!
Is there really Tequila in this dip ?? Heck Yeah!! OK, most of the alcohol is cooked off, but the flavor remains! You are not a day-drinker if you eat this while the sun still shines! I’m just saying. Anyway, every time I make this it takes me back to when I lived in San Antonio at Fort Sam Houston. Yes, I am mentioning Texas again.
My mid-western friends (other military wives) and I used to make this stuff on the grill…and used Velveeta (cringe) for the cheese! We thought we were so sophisticated…hayseeds is more like it! I laugh every time I think of it!
Just a note on making this – I bought queso quesadilla to make this batch of Tequila Queso Fundido. I got real fancy for you! Normally, I just use Monterey Jack cheese because it is a whole lot less expensive. Frankly, I did not notice much of a difference in the taste. Here’s how I made it:
Ingredients
- Poblano Peppers
- Onion
- Olive Oil
- Tequila
- Queso Quesadilla or Monterey Jack
- Flour
- Tomato
- Cilantro
The first step is to preheat the oven to 350 F. Then, pull out a medium size skillet, and heat up the olive oil. Add the poblano pepper and onions to the oil and stir them around over medium-high heat until the peppers and onions are tender, about 5 minutes. Remove the skillet from the heat and carefully add the tequila to the skillet. Return the skillet to the stove, lower heat and simmer uncovered for about 15-30 seconds, You want most of the tequila! to evaporate. At the same time, leave enough liquid so the vegetables are still moist.
Now, spoon this mixture into a 2-cup oven proof dish or small oven proof skillet. I actually used 2 oven proof ramekins that hold 1 cup each. That’s why you see 2 ramekins in the photo below. (I was alone and did not want to be tempted by 2 cups of tequila deliciousness. So I divided the ingredients up between the 2 ramekins and then put one of them right into the fridge and out of site when it was done!)
In a separate bowl, toss the shredded cheese with the flour, then sprinkle the cheese over the cooked vegetables in the dish. Bake in the pre-heated oven for 10 minutes, just until the cheese is melted. Turn the oven to broil and cook for 2-3 minutes until the cheese starts to bubble. Remove from the oven.
Now, garnish with the tomatoes and the cilantro. Serve with Homemade Tortilla Chips or warmed tortillas.
Use the lime wedge to squeeze some juice on your chip before digging in…the flavor is amazing!
Tequila Queso Fundido
Ingredients

- 1/3 cup onion chopped
- 1 tbsp olive oil
- 1/3 cup tequila
- 1-1/2 cups queso quesadilla shredded
- 1 tbsp flour
- 1/2 cup tomato chopped
- 1 tbsp cilantro chopped
- Tortilla chips or warmed tortillas
Instructions
- Preheat the oven to 350 F.
