Easy Mexican Sopes are fresh and delicious appetizers that will be a hit at your next party – top them with your favorites like beans, cheese and sour cream!
I am so glad that I discovered these Easy Mexican Sopes…even if mostly by accident! A while back I was making a recipe that called for masa. Since I only needed 1/4 cup for the recipe, I went to the grocery planning on buying just a small package. And wouldn’t you know it, all the store had were 5 pound bags. Drats!
When I got home, I gave the bag a once over and learned that you use masa to make tortillas. Awesome, I can make almost 400 tortillas with the rest of the bag!! Really? I don’t own a tortilla press and have no plans to buy one so that’s not gonna happen. Anyway, on the side of the bag was a recipe for making sopes. Interesting…little mexican appetizers…now that is something I could get behind!
These little apps are amazing! I dressed these sopes up with refried beans, grilled chicken, onions, tomatoes, lettuce and sour cream. Let me tell ya, they did not last long on the platter!
To make this beauties, you will need the following:
2 cups instant corn masa flour
1-1/2 cups water
1/4 cup vegetable oil
1-1/2 cups refried beans
2 grilled chicken breasts, sliced thin
1 cup tomatoes, chopped (I used Roma)
1 large red onion, chopped
2 cups chopped green leaf lettuce (about 5 leaves)
1/2 cup cheddar cheese, shredded
1 cup sour cream
Get started by measuring the masa into a medium bowl. Add the water and use a fork to mix it into a thick dough. The dough should feel soft and spongy.
Divide the masa into 20 portions and roll the masa into balls. Press the dough with your hands to form small thick patties, about 3 inches across. It’s like forming a hamburger patty!
Heat a large skillet on high, DO NOT ADD THE OIL YET, and cook each patty for 1 – 2 minutes on each side until lightly browned. Immediately after cooking the patties, use your hands to press around the edges of the patties to form a rim about 1/4 inch high. Be careful doing this because the dough patties will be very HOT! While you are doing this, keep the sopes warm by covering them with a cloth.
Now, heat the oil in the skillet and fry the sopes until golden. Remove and drain on paper towel to absorb any excess oil. Spread a tablespoon of refried beans on each sope. Then top with the sliced chicken, cheese, tomato, onion, lettuce and sour cream. Enjoy!

Hi karren, let me know how you like them! I love them because the sopes are thicker than a tortilla and stay firm in your hands when you pick them up! Be careful, that delicious fried corn flavor is addictive…I was picking at them before I got a chance to put the toppings on! LOL
