If you think this classic drink is only for sipping at the beach, think again. This Snow Day Pina Colada is a perfect winter cocktail, with a shot of Snapps, just right for kicking back by the fire. If you love this one, you’ll want to try a Jack Frost Martini and Pretty In Peppermint Martini too!

WHAT IS A PINA COLADA?

A classic Pina Colada is a frothy concoction of rum, cream of coconut and pineapple juice. There are differing opinions on who created this cocktail, but everyone agrees it originated in Puerto Rico. One popular version of it’s origin comes from a Spanish bartender named Ricardo Gracia, from the Caribe Hilton. He claims he  invented this drink due to a coconut-cutter strike. Improvising, he served a traditional rum, cream of coconut and ice drink in a hollowed out pineapple instead of a coconut. When the fruit flavor proved popular, he added pineapple juice to the drink and created the Pina Colada, which means “strained pineapple” in Spanish.

HOW TO MAKE THIS FROSTY WINTER COCKTAIL

This easy to make cocktail is light and refreshing and totally amazing. The concentrated flavor comes from using frozen pineapple instead of ice. Who wants watered down drinks!

  1. Before getting started, shake that can of coconut cream…a lot!
  2. Put all of the ingredients into a blender. I usually start off on the ice breaker setting then move to puree after about 10 seconds. Run the blender until the drink is completely smooth and creamy.
  3. Pour into a pretty glass and garnish with pineapple and cherries on a rosemary pick.

*I made the rosemary pick by using a 5 inch stem of rosemary. I picking off the needles to expose about 3 inches of stem and pushed the fruit through.

Ingredients Needed for this Pina Colada Recipe

  • Light Rum – a good quality silver rum ( like Bacardi) will work. Coconut rum adds a lot of flavor and is a great alternative.
  • Peppermint Schnapps – clear and mint-flavored spirit found with the liqueurs at the liquor store. I used Dekuyper’s 100 proof  Peppermint. What can I say…?
  • Coconut Cream – found online and in grocery stores in the baking or International section. Be sure not to get coconut milk or water – these are not the same.
  • Pineapple juice – fresh or canned will do. If canned, 100% juice is best.
  • Frozen pineapple – freeze your own or use already frozen from the store.

Ingredients

  • 1 ounce light rum
  • 1/2 ounce peppermint schnapps
  • 1 ounce coconut cream
  • 2 ounce pineapple juice
  • 1/4 cup pineapple chunks frozen

Instructions 

  • Add all ingredients into a blender. Blend on high until smooth.
  • Pour into a cocktail glass and add garnish.
