If you’ve been looking for a recipe that offers something different different for breakfast, you can’t go wrong with a Cheesy Bacon Egg Breakfast Crescent Ring. Literally, you can’t go wrong with anything stuffed in a crescent roll, but today we’re talking breakfast…or maybe brunch.

The beauty of this recipe is in how quick and easy it is to make. I know how many times I have stood at the stove making breakfast..first the bacon, then eggs for everyone, then toast. By the time I get to eat, I’m not hungry any more. This recipe makes all that go away and it’s quick. If you use pre-cooked bacon (I use it all the time) you will only need to whip up the scrambled eggs and assemble the ring.

ARE CRESCENT ROLLS AND CROISSANTS THE SAME THING?

The answer to that question can be a little confusing. A croissant is a crescent shaped buttery, flaky pastry of Austrian and French origin, dating back to before the Renaissance and made of light, sweet yeast dough. Because of its shape, it is sometimes referred to as crescent roll.

The crescent roll also refers to Pillsbury Crescents, which is a
 a type of pre-made puff pastry dough invented in the United States in the 1960’s by the Pillsbury Company.

HOW TO MAKE A CHEESY BACON EGG BREAKFAST CRESCENT RING

The hardest thing about this recipe is figuring out the best way to lay the crescent dough. Once you have that knocked out, it’s a breeze.

  1. I like to start by laying out the dough on a piece of parchment. If I need to move anything, it won’t stick. The open center of the ring should be about 5 inches…the diameter of a cereal bowl. If you like, lay a bowl in the center of your parchment and space the dough, overlapping, around it.
  2. Place the bacon in strips down the points of the crescent rolls, Then top the ends (near the center opening) with cheese.
  3. Then, scramble the eggs and spoon them over the cheese. Sprinkle the eggs with cheese.
  4. The final step is taking the pointed end of each dough piece and pulling it toward the center, and tucking it under the overlapping dough. Now you have a ring to transfer to a baking sheet.
  5. Place the ring in the oven to bake, about 20 – 25 minutes until golden brown and you’re ready to eat!

Ingredients

  • 16 ounces refrigerated crescent rolls 2 (8-ounce) cans
  • 1 tbsp unsalted butter
  • 12 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 4 dashes hot sauce optional
  • 1 pound sliced bacon cooked 
  • 2 cups cheddar cheese shredded

Instructions 

  • Preheat oven to 375°F. Line baking sheet with parchment paper for easy clean up.
  • Unroll both tubes of dough and separate each into 8 rectangles at the perforations.. On ungreased baking sheet, arrange rectangles in ring so short sides of rectangles form a 5-inch circle in center. The dough will overlap.
  • Arrange cooked bacon slices on each crescent tip, cut slices if needed to evenly cover. Sprinkle half of the cheese over bacon and half of the crescent dough closest to the center ring.
  • In a medium bowl, beat the eggs, salt, pepper, water and hot sauce until combined.
  • Melt butter in large skillet over medium-high heat. Pour the eggs into the skillet and stir, scraping the bottom of the pan until the eggs are just set.
  • Spoon cooked eggs onto the half of each crescent roll closest to the center ring. Sprinkle remaining cheese over the eggs.
  • Bring each dough rectangle up over filling, tucking dough under bottom layer of dough to secure it. Repeat around the ring until the entire filling is enclosed. Some egg and cheese may be showing between the dough pieces.
  • Place on center rack of oven and bake for 20 – 25 minutes, until dough is golden and thoroughly baked. Cool 5 minutes before cutting into serving slices.

Chef Tips

For more spice, add additional hot sauce to the eggs or substitute shredded pepper jack cheese for the cheddar.
