You don’t need any special pickles…use what you have. Over Christmas I’d bought a huge 2 gallon jar of giant dill pickles to make appetizers and of course it needed refrigerated after opening. After having to move that giant jar for the hundredth time to get something out of the back of the fridge, I was ready to throw it out. There was only a single pickle left for crying out loud. Not enough to make anything…except this dill pickle dip. So there you have it…my rags to riches pickle story.
HOW TO MAKE DILL PICKLE DIP
With only a handful of simple ingredients, this dip is ready in about 10 minutes, including the time it takes to chop up the ingredients and get out your bowl and mixer. If you like a good workout, you can mix it by hand!
INGREDIENTS
- Cream Cheese – I used full fat but light cream cheese will work just fine.
- Dill Pickles – no need to buy anything special, use the variety you like. I used regular hamburger dill pickles, but dill pickles packed in garlic or hot peppers would really amp up the flavor!
- Pickle Juice from the Jar – hmm, I usually dump out the juice but this recipe has got me thinking about using the briny dill juice in other recipes.
- Green Onion (Scallion) – just use the green part for a subtle onion taste…I went all the way and stirred in both the white and green.
- Garlic Powder – just a little is all you need.
- Worcestershire Sauce – gives a nice flavor balance to the dill. For our tastes, I consider this an essential ingredient!
DIRECTIONS
To make this fun and tasty dip, just add all of the ingredients into a mixing bowl and blend together. It’s ready to serve right away, or you can make the dip up to 24 hours ahead, stored in a sealed container in the fridge.
SUBSTITUTIONS FOR MAKING DILL PICKLE DIP
- Cream Cheese – sour cream is a good substitute if you don’t have or like cream cheese. If using sour cream, reduce the amount of pickle juice or the dip may be too thin. Start with 1 tbsp of pickle juice and add more if needed.
- Green Onion – red onion or fresh chives can be subbed in for the green onion. Both are mild and add a mild onion flavor.
- Worcestershire Sauce – soy sauce can work in place of worcestershire in this recipe if you don’t have it. If you don’t have either, you can leave it out.
I like to top my dips with some of the ingredients found in the dip. That makes it easy to know what kind of dip it is before digging in. For this Dill Pickle Dip, I held back a few chopped pickles and onions to sprinkle on top.

Dill Pickle Dip
Ingredients
- 8 ounce cream cheese softened
- 3/4 cup dill pickles chopped
- 3 tbsp pickle juice
- 1 medium green onion minced
- 2 tsp worcestershire sauce
- 1/4 tsp garlic powder
- 1 tbsp fresh chopped dill (optional)
Instructions
- In medium mixing bowl, blend cream cheese, dill pickles, pickle juice, green onion, worcestershire sauce, garlic powder and dill. Add more pickle juice a teaspoon at a time if dip is too thick.
- Transfer to a serving dish and garnish with more pickles, dill and onions if desired.
- Serve immediately or cover and refrigerate up to 24 hours. Stir dip before serving.
