They are completely no-guilt and even with the bacon they’re only 52 calories each, so how can you resist? If you use pre-cooked bacon, this recipe becomes one that is totally no-cook!
The best part is that raw bell peppers pack in tons of vitamins, so you get the best of both worlds. Bell Peppers are super rich in Vitamin C . A half-cup has over 300% of what we need each day and their also a pretty good source of Vitamin A and B-6.
For serving the mini peppers fit perfectly into my Deviled Egg Platter, so that’s what I used. No harm in getting more mileage out of serving pieces you don’t use that often!
For this recipe, I topped each one with a small piece of bacon, but the ranch cream cheese filling has enough flavor that you could serve them plain. Feeling expansive…use them as little ranch dip cups and add a few tortilla chips on top!

Bacon Ranch Mini Pepper Poppers
Ingredients
- 2 slices bacon cooked to crispy and cut into 24 pieces
- 12 mini red or orange bell peppers cut in half lengthwise, ribs and seeds removed
- 8 ounces cream cheese softened
- 1-1/2 tbsp ranch seasoning mix
Instructions
- In a medium skillet, cook bacon until crispy. Drain on paper towel and set aside.
- In a small bowl, combine cream cheese with ranch dressing mix. Stir until all dry mix is incorporated into cream cheese.
- Using a teaspoon, fill the inside of each bell pepper half with 2 teaspoons of cream cheese mixture. Smooth the top.
- Place a bacon piece on each mini pepper.
