Ohio winters can be brutal, so a comforting meal with spicy beans and crackling sausage hot from the oven just warms my heart! And wait – it get’s even better. This recipe starring Italian sausage and garbanzo beans is a 30 minute one-pan meal. Seriously!
So, let me introduce you to my latest cooking love: Garbonzo beans. I know, I know , they just sound so ordinary. But they packed full of protein, have a velvety texture and pop when you bite into them. Who knew that that garbanzo beans could be so good? Just a little factoid in case you were wondering …Garbanzo beans and chickpeas are the same bean. Chickpea is the English name for the bean and Garbanzo is the Spanish name!
Chipotle puree is also called chipotle paste in some recipes. It’s the same thing, just like chickpea and garbanzo. Do I see a theme here?
I thought the amount of chipotle puree I used could be a little spicy for my guys, but the skillet was licked clean after dinner so I am guessing the amount heat was just fine. Dang, I suppose I still need to wash that skillet.
After a busy day, honestly the last thing I want to do is cook supper. But the thought of 10 hungry eyes staring at me, begging to be fed, sends me back into the kitchen looking for something I can put on the table fast. That is why I keep reaching for this recipe over and over. 30 minutes,tons of protein, bold flavors and easy cleanup…just my style.
TIPS FOR MAKING CHIPTOLE SAUSAGE BEAN BAKE
- Brown the sausages of all sides for the entire 10 minutes, to make sure the sausage is almost cooked thru.
- Puree the chipotles in adobo sauce as your first step, set aside until needed
- Don’t own a meat thermometer? Cut into the center of sausage and check to make sure no pink remains.

Chipotle Sausage and Bean Bake
Ingredients
- 1 tbsp olive oil
- 1 pound mild Italian sausage
- 2 cloves garlic chopped
- 2 tbsp fresh cilantro leaves chopped
- 2 tsp chipotle puree from 1 can ( 7 ounces) Chipotle Peppers in Adobo Sauce, see note below
- 30 ounces Garbanzo beans 2 (15-ounce) cans
- 1/2 cup red wine
- 1/2 cup low-sodium chicken broth
- 1-1/2 cups corn fresh or frozen
- extra cilantro for garnish shredded cheese, sour cream, green onions for serving
Instructions
- Preheat oven to 400°F.
- Heat large oven-safe skillet over medium heat. Add oil and sausages, browning on all sides, about 10 minutes. Remove sausages to a plate.
- Add garlic and cilantro leaves to skillet and cook for 1 minute, stirring constantly. Push garlic and leaves to one side and add chipotle puree. Fry in place for 1 minute. Add beans and red wine, stir and allow to simmer for 1 minute.
- Add chicken broth, corn, salt and pepper to the skillet, stir to combine. Top the beans with the sausages, pushing sausages down into the beans.
- Transfer the skillet to the oven and bake until the sausages are fully cooked, (165 degrees on a meat thermometer) about 10 more minutes.
- Garnish (optional) with additional cilantro, cheese, sour cream and green onions and serve warm.
