Chocolate Pumpkin Spice Pull Apart Bread is a soft, buttery loaf chock full of autumn flavors. Chocolate chips, pumpkin pie spice and frozen bread dough combine in this easy recipe that anyone can make.
I’m going to let you in on a little secret, I have not yet mastered the art of bread baking. Are you now wondering why I am sharing this bread recipe? Don’t worry, this Chocolate Pumpkin Spice Pull Apart Bread is made with frozen bread dough you can buy at the store. Just thaw it in the fridge and bake.
How To Make a Pull Apart Bread Loaf
There are a couple of steps to making this beautiful loaf, but they are totally easy.
Ingredients To Make This Recipe:
- Frozen Bread Dough – a one pound (16 ounce) of frozen white bread dough is my preference..but wheat bread dough is a good substitution. Be sure to thaw it fully in the refrigerator. There are no good shortcuts for thawing the frozen bread dough.
- Chocolate Chips – semi-sweet, dark chocolate, mini chips – use what you like and have on hand.
- White Sugar – used for sweetening the bread filling and for making cinnamon sugar to sprinkle over the top.
- Pumpkin Pie Spice – use the link to get the recipe to make Homemade Pumpkin Pie Spice or use pre-made. What is Fall without pumpkin pie spice anyway?
- Butter – unsalted butter gives the cook control over how much salt is in a recipe, but salted is fine here. Just omit any added salt from the recipe.
- Vanilla Extract – this is my favorite brand to use for baking. How can you go wrong with a company that’s been around for over 100 years?
- Cinnamon – using fresh spices ensure that you flavor is amazing. Dry spices last on average 2 years on your shelf…replace them after that.
Directions:
First, roll out your thawed bread dough into a 12 inch square. Be sure to dust your board underneath so the dough doesn’t stick.
Just a note – It need not be perfect – it all turns out amazing in the end.
Go ahead and spread lots of butter mixture over the dough, then sprinkle on sugar, pumpkin pie spice, and the chocolate chips. I used regular semi-sweet chocolate chips and chopped them up into small pieces. If you want – use mini chocolate chips.
With a knife or pizza cutter, cut the dough into 16 “even” pieces. Again, I believe in progress over perfection, so I don’t worry too much about all the pieces being exactly the same size. I like a rustic looking loaf, but that’s just how I roll.

Ready for the next step? Stack the dough pieces 4 at a time in your hands, then fit them into a loaf pan. Spread them out so that all of the pieces are touching. Then you let the dough rise in a warm place for a few hours, bake and enjoy!

Chocolate Pumpkin Spice Pull Apart Bread
Ingredients
- 16 ounce bread dough white bread, thawed in refrigerator according to package directions
- 1/2 cup chocolate chips finely chopped
- 1/3 cup granulated sugar
- 1/2 tsp pumpkin pie spice
- 4 tbsp unsalted butter softened
- 1 tsp vanilla extract
- pinch salt
- Cinnamon-sugar optional for garnish
Instructions
- Preheat the oven to 350°F. Butter a 9 x 5 loaf pan.
- Roll and stretch thawed frozen bread dough into a 12 inch square, on lightly floured board. With a sharp knife or pizza cutter, cut the dough into 16 small squares.
- In a small bowl, combine softened butter, vanilla and salt. Spread evenly over the rolled bread dough. In another bowl, combine the chopped chocolate, sugar and pumpkin pie spice. Sprinkle over the spread butter mixture, pressing lightly.
- Stack bread dough pieces into four stacks of four squares each.
- Place each stack on it's side in the prepared loaf pan. Gently separate the squares so the dough fills the pan and the squares are touching. Cover the loaf loosely with plastic wrap and set the loaf in a warm place until the dough rises by half it's size, about 2 hours.
- Bake the loaf until browned and cooked thru, about 40-45 minutes. Tent with foil if browning too quickly.
- Remove the loaf from the oven and sprinkle with cinnamon sugar if desired. Let cool 15 minutes in the pan, then loosen the sides with a knife. Transfer the loaf to a plate and let cool an additional 30 minutes.
To Make Cinnamon Sugar
- Combine 1/4 cup sugar and 1 tbsp cinnamon in a bowl. Sprinkle over hot bread loaf.
Chef Tips
Note- mini chocolate chips can be used instead of chopped chocolate
