ONE POT BEEF STROGANOFF is weeknight dinner made easy! Everyone’s favorite ground beef stroganoff dish cooked in just one pot.
We’ve been working a big landscaping project at the house this spring, so honestly, I’ve had little time to cook anything. And at the end of a long day, when everyone’s hungry, this hearty, easy One Pot Beef Stroganoff is the perfect meal. It’s full of flavor, made from common ingredients and ready in 30 minutes. Sounds great to me.
To deal with allergies, we’re removing all the mulch in the flowerbeds and replacing it with river rock. Matthew and our son David are doing most of the work, while I am refilling water bottles and doing what I can to help. After all is said and done, I am crossing my fingers that it helps!

INGREDIENTS FOR ONE POT BEEF STROGANOFF
- Ground Beef – I like to use lean ground beef, but not too lean or you’ll lose some of the flavor.
- White Mushrooms – not as flavorful as cremini or baby bellas, but more affordable. They are interchangeable for this recipe.
- Onions – I like to use yellow onions, but white will work too.
- Egg Noodles – I use wide egg noodles for their flavor and size to stand up to the ground beef.
- Beef Broth – use low-sodium beef broth to have more control over the saltiness of the stroganoff.
- Flour – all purpose white flour works best here.
- Sour Cream – this is a must for stroganoff. Full or reduced fat will work just fine.
- Worcestershire Sauce – adds savory flavor to the sauce.
- Spices: Garlic – Thyme – Smoked Paprika. I use garlic and thyme to add more depth of flavor and Paprika is a must for stroganoff! Sweet or Smoked Paprika will both add just the right touch of flavor to this dish. Smoked Paprika adds a subtle smoky flavor that doesn’t overwhelm.
HOW TO MAKE THIS EASY RECIPE
This is a simple weeknight recipe that you can have ready in about 30 minutes. No boiling water, no extra pans…easy cleanup! Sounds like my kind of supper recipe.
- Start by sauteing the mushrooms and onions. Melt the butter in a large pan over medium-high heat. When it’s sizzling, add your sliced mushrooms and onions. Cook until just tender, about 2 minutes. Add the garlic and thyme to the pan and cook until fragrant, about 1 more minute. Transfer everything to a plate.
- In the same pan, brown the ground beef until no pink remains. Drain if needed. Stir the flour into the browned beef.
- Over medium heat, whisk in the broth and worcestershire sauce until no lumps of flour remain. Bring liquid to a low boil. Return the mushrooms, onions garlic and thyme to the pan.
- Add the pasta and stir to cover. Cover pot and boil for 9 – 10 minutes until pasta is tender.
- Remove pan from the heat. Stir in sour cream until completely combined and sauce is smooth.
- Sprinkle with salt and pepper to taste. Garnish with parsley and serve.
TIPS FOR MAKING EASY BEEF STROGANOFF
- Buy already sliced mushrooms, so one less thing to do for dinner prep.
- Avoid dicing onion by purchasing frozen, recipe ready onions. All you need to do is measure!
- Save a step – use good quality already minced garlic. With a jar in the fridge you’ll always have fresh tasting garlic at the ready.
- Draining the fat from the beef may be unnecessary if you use lean ground beef.
- If you have too much liquid toward the end, leave the top off the pan for the last 5 minutes to allow some of the liquid to evaporate.
- If the stroganoff is too thick for your liking, add more beef broth until it’s as saucy as you prefer.
- If you don’t like mushrooms and/or onions, you can leave them out of the recipe without affecting the overall results.
