This Fresh Strawberry Pastry is truly a miracle. Puff pastry makes baking your own breakfast pastries super easy. There’s no dough to roll, you can just cut and bake. The baked strawberries taste like strawberry jam and combined with the puff pastry, they will melt in your mouth.
Puff Pastry is amazingly versatile. Use it for pizza crusts, appetizers or a fancy dessert like our favorite Blackberry Napoleons.
I don’t make desserts too often…it is just too much temptation. But an exception was made because this recipe calls for fresh strawberries. How bad can that be?

- Strawberries
- Butter
- Sugar
- Powdered Sugar
- Heavy Cream
How To Make Fresh Strawberry Pastry
Start by pre-heating the oven to 400 F. Next, hull the strawberries and cut into thin slices with a paring knife, about 5 to 6 slices per strawberry.
Unfold the puff pastry on a sheet of parchment paper…or flour dusted board. To save your sanity, do not unfold the pastry onto any surface it could possibly stick to.
Using a pizza cutter (easy) or sharp knife (not as easy), cut the puff pastry sheet into 9 squares. It’s best to cut on the existing fold lines, then cut each long rectangle into 3 squares, for a total of 9.
Now, use that paring knife (by now it’s probably hiding under something on the counter) and cut a shallow channel about 1/4 inch from the edges of each square. Trust me, there is a real reason for doing this!
Melt the 2 TBSP of butter. Using a pastry brush, lightly brush each square with melted butter, then sprinkle each square with 1-1/2 tablespoons of the sugar.
Place 4 slices of strawberry on each pastry square, staying within the lines you cut with the knife.
Dust the squares with the remaining sugar and place the sheet pan in the 400 F oven. Bake for 20 minutes, but begin checking the oven at 18 minutes. The pastry will be golden brown when the pastries are done.
Transfer the pastries to a wire rack and let rest until the strawberries are cool. They are ready to serve, but if you want to make them extra tasty (why not?) then whip up the glaze and drizzle it on the pastries.
Make the glaze by combining the confectioners sugar and cream in a small bowl. Add the cream 1 TBSP at a time until you have reached the consistency you want for the glaze. Drizzle over the pastries!

- 1/3 cup confectioners sugar
- 1-2 Tbsp heavy cream
Instructions
