I’m back again with another simple and totally delicious sheet pan recipe. Dinner never tasted so good! ? Once I discovered easy sheet pan cooking I was totally hooked…for life. Crispy meat and roasted potatoes…what could be better for one-pan dinner.
One of our favorite thinks about this dinner are the crispy potato wedges – perfect for dipping in your favorite sauce!
Ingredients Needed for Sheet Pan Garlic Herb Chicken with Potatoes
This is one of the easiest meals you will ever make. Roasted chicken breast with potatoes seasoned with herbs and spices are packed with amazing flavor and all baked on the same pan.
- Chicken Breasts – we used the boneless, skinless variety. Each breast is about 8 ounces and we left them whole. For quicker cooking time, you can cut them in half lengthwise with a very sharp knife, making a thinner cut. (if you go this route, cut the potatoes into thinner wedges so they bake faster too!)
- Potatoes – we love Yukon Gold potatoes for crispy baked wedges. The skin is super thin so the potatoes require no peeling. Another great option is russet potatoes!
- Olive Oil – Olive oil is our healthy choice… but any vegetable oil will do just fine!
- Garlic Powder – a true workhorse of the spice rack, add savory flavor that compliments both the chicken and potatoes.
- Dried Parsley Flakes – adds earthy flavor to this dish.
- Paprika – for beautiful color and flavor. Try using smoked paprika…it’s amazing!
- Salt – brings out the flavor of just about everything! We used regular old table salt for this recipe. For variety, try a flavored sea salt!
- Black Pepper – adds light heat and flavor.
- Dried Rosemary – compliments the chicken and adds savory flavor. Thyme is a delicious substitute!

?Quick Tips!
Cut your potato wedges into same-sized pieces for even cooking.
Slice super thick chicken breasts in half lengthwise before baking. A thinner breast will cook ALOT faster than thick ones. You can buy chicken cutlets where this is already done for you.
Use a large rimmed sheet pan, or two smaller ones so the chicken and potatoes are not over-crowded. I used this brand of aluminum 1/2-sheet pan to make this recipe!
While the meat and potatoes are cooking, mix up a tasty sauce like fan fav garlic dill aioli or our super popular Korean barbecue sauce so you’re ready to go when the meat comes sizzling out of the oven. Serve warm.

Garlic Herb Chicken with Potatoes
Ingredients
- 1 pound chicken breast boneless, skinless
- 1 pound Yukon gold potatoes washed, cut into wedges
- 2 tbsp olive oil divided
For The Chicken Rub and Vegetable Flavoring
- 1 tsp garlic powder
- 1 tsp parsley flakes
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp dried rosemary
- 2 tbsp chopped fresh parsley optional for garnish
- 1/8 tsp cayenne optional
Instructions
- Preheat oven to 400°F.
- In a small bowl, mix garlic powder, parsley flakes, paprika, salt, pepper, dried rosemary and cayenne until well combined. Place potato wedges and chicken on baking sheet.
- Drizzle olive oil evenly over chicken and potatoes, tossing to coat. Sprinkle with herb and spice mix, toss again to coat all sides with spices.. Arrange potatoes and chicken on sheet pan into single layer.
- Place sheet pan on middle oven rack. Bake 35-40 minutes, until internal temperature of chicken reaches 165° at thickest part of breast and potatoes are tender and golden.
- Sprinkle with fresh cut parsley and serve warm.
