Measure 3 cups ( use the plastic cup that came with the Instant Pot) of rice into a fine-mesh strainer and rinse with water. Keep rinsing until the water runs clear. Add the rice to the Instant Pot. Be sure there are no stray rice grains on the top edge of the pot.
Measure 3 cups (IP plastic cup) of vegetable or chicken broth and pour the broth over the rice in the IP.
Close the lid and lock it down. Select Pressure Cooker, and then adjust the + and – buttons to set for 4 minutes of cooking time. Be sure the vent is closed.
Tips and Hints for making the best Instant Pot Almond Rice:
- I always say this, but the best results start with quality ingredients, so use the best you can afford.
- When it comes to using spices, keep the shelf fresh by storing spices in a cool, dark place, away from direct heat or sunlight. In tightly closed containers whole spices will stay fresh for about 4 years, ground spices for about 2 to 3 years and dried herbs for 1 to 3 years.
- When using butter, make it the unsalted variety. Unsalted butter gives you, the cook, complete control of the overall flavor of your recipe.
While the IP is heating up and cooking, toast the almonds in a small skillet on the stove. If you are not sure how, follow these easy steps:
- Pour the sliced almonds into a small heavy skillet and set the heat to medium heat.
- As the skillet heats up, shake the pan to stir the almonds. Cook for 1 – 2 minutes until the almonds are golden brown and fragrant.
- Remove the pan from the heat. Remove nuts from the pan to cool.
- Do not over toast the almonds in the pan. The hot oil in the nuts will continue cooking as they cool.
When the time is up, open the lid using the 10 minute natural release method. Fluff the rice with a fork, then stir in butter, spices, parsley and almonds. Serve warm.

What is the 10 Minute Natural Pressure Release Method?
As you are reading this recipe, you may be wondering what 10 Minute Natural Pressure Release is. It is the method recommended for meat, soups, liquids and foods that may froth, like grains. This method takes 10 minutes and allows pressure to release naturally once the heat for the cooking program is turned off. After 10 minutes, carefully turn the valve to allow any remaining pressure to be released, then open the lid.
Essential Tools and Ingredients needed to make Instant Pot Almond Rice:
- Instant Pot – I use it all the time, either the Pressure Cooker function or the Slow Cooker function, I also like that I can sauté / brown meat and veggies directly in the pot using the Sauté function and use it as a rice cooker…comes out perfect every time.
- Jasmine Rice – I prefer to use Jasmine Rice over any other for rice dishes with delicate flavors or when nuts are added.. It is a long grain variety of rice that has a subtle floral aroma and a soft, sticky texture when it’s cooked. The grains are shorter and thicker than Basmati rice.
Instant Pot Almond Rice
Ingredients

- 2 tbsp parsley chopped

- Remove the pan from the heat. Remove nuts from the pan to cool.
- When the cooking time is up, turn off the Instant Pot. Allow the pot to sit for 10 minutes while the pressure in the pot releases naturally, using 10 Minute Natural Pressure Release **
- Turn the vent to release any remaining steam and open the lid.
- Fluff the rice with a fork, then stir in butter, spices, parsley and almonds. Serve warm.
